I love Costco for a lot of reasons, but their boneless chuck short ribs are DEFINITELY one of them. I use them for so many different things, but my Smoked Boneless Chuck Short Ribs have been one of the best bites of the year. It is kind of a throwback to a smokey pot roast bite, in all of the best ways. You can BBQ it up by slathering on some BBQ sauce at the end, or enjoy these tender beefy bites as-is. You'll love them.
